I made this for lunch one day when the fridge was empty and the wallet was lean. It was a cool winter’s day, in the fridge was a carton of eggs, some milk, plain yoghurt and a lemon, in the pantry were two tins of sardines, a bag of rice and a tub of chocolate protein powder that someone had donated because they didn’t like the flavour! I ate a tin of sardines while I made this rice pudding… and found an apple in my handbag for afterwards! Serves 1.
1 cup full fat organic milk (or milk substitute)
1/4 cup white rice
1/2 scoop natural chocolate protein powder
Combine ingredients in a sauce pan and bring to the boil then simmer for about 20 minutes stirring. Done!
