Ingredients:
2 cloves garlic
1/2 onion
1 sweet potato
1 carrot
2 celery sticks
1 leek
Spinach
4 standard tomatoes
1 teaspoon MightyMite (GF Vegemite)
1 splash Worcestershire sauce (GF brand)
1L vegetable stock
2 tablespoons dried mixed herbs
Method:
Finely dice the garlic and onion. Chop the remaining veg except the tomatoes into 1 cm cubes. Using ghee, lightly fry the garlic and onion and then add the chopped veg and cook for a couple of minutes stirring. Add the stock and the seasonings and stir it all together. Place the 4 whole tomatoes into the casserole, cover with the lid and bring to the boil. Turn to a simmer and cook until the veg is cooked through. Using a big spoon smash up the tomatoes and stir it all around. Done!
I ate this with two poached eggs for dinner and for lunch the next day with cheese and crackers 🙂
