5 weeknight dinner recipes

After a few weeks of mayhem, getting home late at night and scrapping pantry staples together with whatever was left in the fridge, I had some time today to clean up the house and plan some meals for next week. I did a bit of searching and found  5 ideas for dinners this week. With the weather turning and these cooler nights becoming more frequent, I’ll be getting my slow cooker out to make some soups and curries over the next few weeks. Enjoy!

Thai pumpkin soup with prawns  – Use coconut oil and skip the brown sugar.

Potato and leek soup – Best to get your sourdough from a reputable local baker so that you know its been made traditionally with a long ferment time to reap the benefit of improved digestibility and get that unique sour taste. Did you know that approximately 18 hours is needed for the dough to develop? Unfortunately the big stores have created ‘fast’ sourdough methods using additives – more than the traditional recipe of just flour, water and salt, meaning the good bacteria aren’t able to work their full magic on your bread. Or you could skip the bread altogether!

Mince, basil, chilli and fried egg

Salmon and pesto veg

Pumpkin, chickpea, red lentil curry – One for the slow cooker!
