Cauliflower Fried Rice

Ingredients:

– 1/2 head of cauliflower – blitzed in the food processor to rice consistency

– 1 carrot grated

– 1 zucchini grated

– 2-3 cloves garlic thinly sliced

– 1/2 an onion finely chopped

– Coconut oil

– 2-3 tablespoons of tamari (GF soy sauce)

Method:

Fry the garlic and onions in oil on a medium heat until the onions are soft. Throw in the other veg and cook stirring until it all softens up (5-8 mins usually) then add the soy sauce and stir well. I often add a bit more coconut oil too. Done. You can add a fried egg or some meat but is also super tasty on its own.
