Zucchini fritters

This is an easy fritter recipe from Lola Berry and I have made a couple of simple changes. Kelly loves Lola’s book ‘The Happy Cookbook’ – you can find the original recipe at lolaberry.com.

Serves 4

Fritters:

4 zucchinis grated and all the liquid squeezed out with paper towel

Big handful coriander

Finely chopped 1⁄2 red onion

1 chilli finely chopped
3/4 cup your choice GF flour
1⁄2 teaspoon baking powder
1 teaspoon cumin
1 teaspoon turmeric
2 eggs

Mix all the dry ingredients then add the eggs. Combine and dollop into a fry pan with hot coconut oil. Squish the fritters into patties and cook for a few minutes or until golden on both sides.

Dressing:

1 cup full fat yoghurt, zest from 1 lemon, handful chopped mint, sea salt, freshly ground black pepper.
