Ingredients:
Fresh white fish fillet between 1 or 2 people depending on size
Veg such as – spinach, cherry tomatoes, olives, thinly sliced zucchini, asparagus spears with the woody end removed, thinly sliced garlic, lemon slices
Anchovies in oil
Extra virgin olive oil
Basil
White wine
Method:
Preheat oven to 180 deg C. Place 2 fillets of white fish into a piece of foil, add enough veg for two people, plus 4 lemon slices, a couple of anchovies, a handful of herbs +/- a small splash of white wine. Drizzle with olive oil. Wrap up the edges of the foil up and over the fish almost completely sealing it in. Repeat depending on the number of people you are feeding. Cook for approx. 15 mins or until fish flesh breaks up easily. You could add boiled or roasted potatoes and serve on a plate or serve it straight from the foil in the middle of the table.
