White fish in foil – Asian

Ingredients:

Fresh white fish fillet between 1 or 2 people depending on size

Veg such as – Chinese broccoli, broccolini, bok or pak choy, leek, thin sticks of carrot, spring onion, thinly sliced garlic and ginger, lemon slices

Extra virgin olive oil

Soy sauce or tamari (GF)

Method:

Preheat oven to 180 deg C. Place enough veg for two people then 2 fillets of white fish into a piece of foil. Add 2 lemon slices, a few very thin slices of garlic and ginger per fish fillet, a few splashes of soy sauce and a good drizzle of olive oil. Wrap up the edges of the foil up and over the fish almost completely sealing it in. Repeat depending on the number of people you are feeding. Cook for approx. 15 mins or until fish flesh breaks up easily. You could add brown rice and serve on a plate or serve it straight from the foil in the middle of the table.
